Easy, budget-friendly meatloaf with a sweet and tangy sticky glaze. Makes approximately 6–8 servings.

🍳 Directions

  1. Lay a wide piece of heavy-duty foil across the bottom of the crockpot, leaving enough hanging over the sides to lift out the meatloaf later. Lightly coat the foil with cooking spray.
  2. In a large bowl, whisk together the eggs, milk, ketchup, Worcestershire sauce, Adobo seasoning, garlic powder and black pepper.
  3. Stir in the breadcrumbs.
  4. Add the ground beef and diced onion. Gently mix just until combined. Do not overmix, because that can make the meatloaf dense.
  5. Form the mixture into an oval loaf and place it on the foil sling inside the crockpot. Leave a little space around the edges for even cooking.
  6. In a small bowl, mix together all the sticky-glaze ingredients.
  7. Spread approximately half of the glaze over the meatloaf.
  8. Cover and cook on LOW for 5–6 hours, or until the internal temperature reaches 160°F.
  9. Carefully lift the meatloaf out of the crockpot using the foil sling and place it on a baking sheet.
  10. Spread the remaining glaze over the top.
  11. Place the meatloaf under the broiler for 2–3 minutes, just until the glaze is bubbly and caramelized. Watch it closely.
  12. Let the meatloaf rest for 10 minutes before slicing.
