Meesh’s Hearty Cabbage Stew
Crockpot & Dinner
Easy ingredients and big flavor come together in this hearty slow-cooked comfort-food favorite.
Ingredients
- 2 lbs ground turkey (you can also use ground beef)
- 3 cloves garlic, minced
- 1 tablespoon oregano, for turkey mixture
- 2 cups water
- 2 tablespoons beef bouillon
- 1 head cabbage, cut up
- 10 small potatoes, diced (skins can be left on or peeled)
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 medium red onion, diced
- 1 (14.5 oz) can petite diced tomatoes
- 3 tablespoons oregano, for crockpot
- 1 tablespoon salt
- 1 tablespoon black pepper
Directions
- In a large skillet, brown the ground turkey or beef. Add minced garlic and 1 tablespoon oregano. Do not drain.
- Add 2 cups water and 2 tablespoons beef bouillon. Cook on low for about 10 minutes.
- Layer the cut-up cabbage on the bottom of your crockpot.
- Pour the turkey mixture over the cabbage.
- Sprinkle the diced potatoes, red and green peppers, and red onion on top.
- Add 3 tablespoons oregano, the can of petite diced tomatoes, 1 tablespoon salt, and 1 tablespoon black pepper.
- Cover and cook on low for 6–8 hours, stirring here and there.

- You can use ground turkey or ground beef — both are delicious.
- I leave the skins on my potatoes, but you can peel them if you prefer.
- I run my peppers and onions through the food processor to keep the pieces small, but you don’t have to.
- Stirring here and there helps everything cook up beautifully.
- It’s absolutely delicious topped with shredded cheese in your bowl!
